This café is run by the number one producer of bittern (called "nigari") in Japan. Bittern, which is a by-product of sea salt production that contains many healthy salts, is an essential part of tofu-making. Try it for yourself in their Tofu-Making Class.
The cafe itself is known for its super fresh tiger prawns, served in delicious dishes including Japanese-style fried shrimp and tiger prawn pho.
