Everything in these gyoza is locally produced, including the cabbage, pork, and sea salt. The gyoza skins are made in the same way as sanuki udon, which gives the finished product a wonderfully chewy texture. Try the Mitoyo Gyoza, filled with umami flavors and steamed to perfection.
